Nathan Lobel began raising beef cattle in Austria in the 1840s, and with the help of his son, later added a slaughterhouse to the business rris joined the family business as a boy, and in 1911, at the age of 17, he emigrated to the . Morris eventually settled in New York, where he opened a butcher shop, first in the Bronx and later at the current location on the Upper East Side of Manhattan.

Had this in paperback, got it in hardback, used. A great book that covers all meats and some game. Very useful.
This is my dog's favorite book. He loves meat, preferably raw. I picked up the hardcover version of this book years ago at either a thrift store or library sale. It was written in the early 70's and has many nice illustrations of all kinds of cuts. There are even illustrations on how to carve.The Lobel Brothers are well known in NYC for their knowledge of meat, including game. I was disappointed that skirt steak was not featured at all. Don't expect hanger steak or tri tip to be mentioned either as they didn't become common until years later. As far as being helpful with picking good steaks, the book tells you what to look for, what to avoid, and has a lot of recipes, some from their celebrity clientele.

I think this book was republished later on as All About Meat, but this is the original and has dated well. If you do not live in NYC, you can special order steaks and chops from Lobel's online. Those looking to up their knowledge about meat to improve their cooking skills or are looking to switch their pet to a raw diet will benefit from this book.
Why in gods name is this five hundred dollars!!!!???????
